Citrus. Strawberry. Shortbread. 

This light-medium roast is sweet, citrusy, and has gentle notes of lemon, strawberry, and shortbread with a creamy body. Within the first two weeks off roast it is more reminiscent of lemon shortbread and after more time and development after roasting, gives way to a strawberry sweetness.

About the producer: This is the third coffee (but first caffeinated option!) we've selected from the Musasa Dukunde Kawa cooperative in Rwanda. This lot comes from Baliza, in the Ruli Sector of Gakenke District, home of Musasa Dukunde Kawa's headquarters and where the majority of cooperative production takes place. This special lot comes from 69 dedicated coffee producers and was exclusively profiled by our sourcing partners to achieve a really unique and high quality coffee experience.
About harvesting/processing: Cherries were handpicked when fully ripe, graded, mechanically pulped that same evening, and fermented overnight (approx. 12 hours). After being graded once more, they are soaked for 18-24 hours to stabilise moisture content. The washed beans are sorted on pre-drying tables under shade cover for 6 hours and then again after being moved to drying tables for about 25 days so the beans reach 11% humidity. They then make their way from the Ruli storage warehouse to the cooperative's new dry mill in Kigali where they undergo final dry milling, hand-sorting, and cupping before export.
