Plum. Honeysuckle. Vanilla.
This light-medium roasted honey-processed coffee is fruity, sweet, and light. With notes of super-ripe plum, honeysuckle (think floral-honey sweetness), and vanilla to round things off, it's just a really beautiful lot of coffee. Ideal for filter brewing and black espresso drinks but also pairs really well with oat milk if you're set on having a flat white.
Region: San Juan Sacatepequez, Guatemala
Varietal: Bourbon
Process: Red honey
Altitude: 1950 MASL
About the producer: The Sanchez family has owned the Finca San José Ocaña for over 110 years. The farm is located in San Juan Sacatepequez. San Jose Ocaña has always been a sustainable agricultural operation, which started mainly as a forestry farm management. It became a fine coffee producing farm, serving only the prime speciality coffee market. This is primarily a result of its high altitude, good clayish soils, and varietals. This coffee was imported by one of our dear sourcing partners, Caribbean Goods. Javier from Caribbean Goods actually grew up alongside and was school pals with Cristián Sanchez, whose father Guillermo runs San Jose Ocaña.
About the harvesting/processing: The farm has its own wet mill on the premises, which allows them to control quality. The beans at the farm are grown at 2,000 meters above sea level which increases the density of the coffee cherry and provides for lower yields and higher quality.
